Shredded Cabbage Apple Salad w/ Creamy Lemon Mustard Dressing

Serves 1

Time: 15 minutes

Salad

2 Cups Shredded Napa Green Cabbage

1/2 red apple, thinly sliced

Optional garnish, crushed pecans or your preferred nut or seed

Dressing

2 Tablespoons Tahini or your preferred Raw Nut or Seed Paste

2 Tablespoons Fresh Lemon Juice or 2 Tablespoons Apple Cider Vinegar

2 Teaspoons Mustard Powder

1 Teaspoon Dried Parsley

1 Teaspoon Turmeric

Optional 1 Teaspoon Dried Garlic

Dash of Black Pepper

1/3 cup filter water

Blend dressing until smooth, it may need more water depending on the consistency of your nut or seed paste/butter. Massage dressing into salad.

This recipe has some sweet and warm autumn inspired textures and flavors. The combination of cabbage and lemon juice helps breakdown some of the fibers in cabbage to help us digest it easier. You could shred the cabbage with a mandolin, thinly slicewith a knife or use the shredder blade on your food processor.  If you do not have a blender for the dressing, you could use a fork and do a bit of a mashing & mixing. If you own a small food processor this could be just enough liquid, again I stress the food processor vessel would need to be smaller compared to the standard ones.
