I know I just shared a post yesterday with you all but I created this very simple salad using goodies I had around the house that I wanted to finish off. I am going grocery shopping tomorrow so the past few days have been the most creative because I don’t want to buy anything and just focus on using up whats in the fridge.
I promise I’ll keep this super duper short! *pinky promise*
I used a spiral slicer to make the cucumber noodles, if you do not have one please feel free to julienne slice (match sticks) your cucumber. I just like to add as many shapes, colors, and textures to my dishes! This helps make salads exciting, beautiful and delicious 😀
Mediterranean Cucumber Salad Recipe
One large cucumber, spiral sliced or julienne cut
Half of a medium bell pepper, deseeded and chopped
4-6 Kalamata olives, cut into fours (slices)
3 large basil leaves shredded by hand
3 tablespoons soaked sun-dried tomatoes (we do not need the water from soaking them, soak for at least one hour in water)
Juice from half of a lemon
Gently toss and enjoy this simple, clean and nutritious salad!
If you can let this sit in the fridge for an hour or so before eating the flavors will really pop and the lemon juice has a little time to work it’s flavor into all of the ingredients.
Besides soaking the sun-dried tomatoes and letting the lemon juice work some magic, this recipe takes tops 10 minutes depending on how skillful you are with a knife 😉
This is a great dish to serve at a party, especially on a warmer day since this has a rather sunny, light and crunchy feel. I hope this inspires those out there who feel intimidated by the challenge of just using up what’s in the fridge. I have found my favorite creations this way in all honesty.
