Alkalizing Coooooookies?!
Yes’m you read that correctly. These cookies are mostly made of sprouted raw almonds. Almonds are the second most alkalizing nut, chestnuts are #1.
Almonds provide more calcium than other nuts, and it’s high calcium levels combined with it’s high magnesium content is what makes almonds alkaline-forming.
They are also high in calories!
A 1 oz. serving contains just over 170 calories, of which 102 calories are from heart-healthy polyunsaturated and monounsaturated fat. Monounsaturated fats help us feel fuller for longer. Their high fiber content prevents a chatty stomach 😉
Almonds are an excellent source of; protein, potassium, Vitamin B2, iron, zinc and vitamin E, and a good source of antioxidant flavonoids. Like many other nuts, they help in reducing ones LDL cholesterol levels, and are great for preventing heart disease.
Since they are a fat, thus can be highly addicting and are also high in calories like any nut I kept these cookies small, 1 tablespoon each.

The lemon juice and zest in this is also very alkalizing which may sound impossible but lemons so contain acid they have a very high content of the strongly alkaline minerals like; potassium, magnesium and sodium. These minerals are what has such an alkalizing effect on the body. I have previous posts where I go into more detail about lemons and being cleansing.
I use a bit of vanilla powder! This spice also contains small traces of minerals such as; calcium, magnesium, potassium, manganese, iron and zinc. Potassium is an important component of cell and body fluids that helps control heart rate and blood pressure. Iron is essential for red blood cell production. It helps keep your blood healthy and happy :D! Vanilla can calm a queasy stomach, calm the nerves, assist in weight loss and arguably enhance ones mood. I use coconut nectar since it is my preferred liquid sugar. I personally am not okay with agave nectar, a topic I go into great detail in this post. I also go over the health benefits of coconuts in a previous post. I wrote a post around a year ago with items I recommend for your Unbaking Cabinet 😉

Alkalizing Almond Lemon Vanilla Dough Cookies Recipe
Makes 12, 1 tablespoon cookies
1 cup raw almonds, soaked over night, water removed, and peeled
Put this alone in your food processor until you have a very choppy looking mixture that is not a dough just yet.
Add…
2 tablespoons fresh lemon juice
1 tablespoon lemon zest, I used a microplane/fine grater but grating it then chopping it is also good
1 tablespoon coconut nectar
1 teaspoon vanilla powder or 1 tablespoon if you want the vanilla to be very apparent
A pinch of Himalayan Pink Salt

Blend until it is a smooth dough, everything looks evenly spread out and is binding together into a ball.
I used my tablespoon to scoop out the dough and rolled it into a cookie shape with my hands. But for more professional looking cookies, scoop out the dough and roll it out.
Chill them for 2 hours before serving. These will stay yummy in the freezer for around 2 months.
After they have chilled so they can bind, settle and keep their shape I add some grated pieces of lemon zest on top of the cookies. Completely optional but it looks and tastes extra yummy this way!
