Watermelon & Basil?

It’s amazing just how delicious watermelon tastes with other ingredients that may not typically come to mind. Lime, lemon, cucumber other fruits possibly are thought about but herbs and spices match up deliciously with this super fruit.

In the past I have made Watermelon Jalapeno Lemon Mint, Watermelon Lime Rose Water Steeper (a favorite of mine), Watermelon Ginger LemonadeWatermelon Kale Lemonade, and Spicy Watermelon Jerky.

Today I would like to share a Rind Heart Watermelon Basil Juice. A few days ago I focused on the health benefits of watermelon rinds. They tend to change the color of the juice so it doesn’t look as bright and pretty. So to make something more pleasing to the eye I cut the rind into heart shapes and let it steep in my juice. This way the fibers from the rind are being released into the liquid. I wanted to make a drink that my friends would love the taste, look, be refreshed and surprised!

Rind Heart Watermelon Basil Juice

 

1 1/2 cup watermelon juice

1/2 lemon with rind, if organic

After I juiced this I added the above with…

1/2 cup coconut water

2 large basil leaves (you could use mint, parsley any of your favorite herbs)

A handful of ice (optional)

Heart shaped rinds (PLEASE use organic) and two wedges of lemon rind for appearance and some extra fiber 🙂

Now that it is getting warmer out where I live I LOVE eating or juicing melons, cucumbers & citrus!
