I recently picked up some purple asparagus, the color suckered me in. Besides with berries, I usually find it difficult to find this shade in food. If you are interested in learning more about purple foods here is an amazing article all about them from one of my favorite websites, Natural News.

Difference Between Purple Asparagus And Other Types?
Purple asparagus differs from its green and white counterparts, having high sugar and low fiber levels. It’s powerful violet coloring is only skin deep, its flesh is pale green to off white. When cooked purple asparagus develops notes of artichoke, barley and almonds. I personally love to make cooked asparagus for friends with olive oil, balsamic vinegar, garlic and lemon juice!
How or Why Purple?
Purple asparagus’ color comes from the high levels of anthocyanins in the spears. Anthocyanins are powerful antioxidant flavonoids that have protective and preventative health benefits including; anti-inflammatory and anti-cancer properties. Rich in an antioxidant called glutathione, purple asparagus has also been found to help prevent eye problems, like cataracts.
Many of the other benefits are just like green asparagus, for more information please read my previous post. I also share how to pick, store, and prepare asparagus 😀

Asparagus is 93% water, I was completely surprised to find this out! Looks like I found another high water content goodie to keep on my regularly purchased list 😉
I’ve also been hearing from some reliable friends that eating asparagus before consuming alcohol has prevented a hangover. If anyone has tried this out I’d love to know hahaha. I do not personally drink but I’m interested in hearing everyone’s story.
Today with some asparagus I made a…

What feels like I while back I was sharing some of my GreaterAde Recipes and concerns I have with “sports drinks.” I recently made a “Blue/Purple” drink, Blueberry GreaterAde. I found this to be especially sweet and satisfying!

1/2 lime juice, rind removed (optional)
Juice then add coconut water or put it through your juicer to help get anything that may be lingering in the machine 😉
