For any skeptics out there, there has been a mega huge delicious plant food finding at the Harvard School of Public Health. Plant foods have a connection between high levels of antioxidants that increase levels of optimism! Huzzah!
This is because of the levels of carotenoids found in some produce items such as kale, spinach, carrots and sweet potatoes.
There may even be a link to reducing stress. The study was done on participants who consumed a minimum of three servings a day, those who were more pessimistic ate fewer then two servings a day.

To celebrate this glorious scientific find I made a juicy Happy Kale Citrus Sunshine Juice. I used several high carotenoids fruits and vegetables plus fennel for an extra feel good boost 😉
I made a rather awkward dorky video all about it. I left my music on, my stove light kept flickering, I have no idea how to move my phone for the right angle, I mumble, and I even spit bubbles on myself while talking! Yay, hahaha. Happy Kale Citrus Sunshine Juice
4 kale leaves
1 orange peeled
1 lemon with rind if organic
1/2 cup fennel
4 celery sticks
(Above are all the strong mood boosting foods)
1-inch ginger peeled
1-inch turmeric peeled
Optional, small handful of pineapples I used leftover cores
I guess I have a little fun with paint at times with the bottoms of celery and lettuce. Here is an example of what I did today with my celery bottom. This can be something fun to do to relax and not feel too bad wasting the bottoms. Celery bottoms can actually be planted and grow! Same with pineapple tops 🙂
