Curried Pineapple Carrot Raisin Kale Salad Recipe

I hope you all are having a wonderful holiday weekend with good company and good food! The both go so well hand in hand, good company can make food taste better at times. Today I really have had no plan for myself and I think I am only benefiting from it.

Out of nowhere I made a Curried Pineapple Carrot Raisin Kale Salad.

Dressing:

Two Pineapple rings chopped & cored

1 Tablespoon Tahini ( I use Artisana Raw Tahini, its organic & delicious!)

2 Tablespoons Raw Shredded Unsweetened Coconut

4 oz Coconut Water (just water is fine too)

2 Tablespoons Raisins

Blend until everything is smooth :D!

Salad:

10-12 pieces of kale destemed, bite sized pieces

1 Tablespoon fresh lemon juice to massage kale with before adding the dressing to help make the texture of raw kale softer to chew

1 Small Carrot shredded (I used my veggie peeler)

1 Pinch Raisins

1 Pinch Raw Shredded Unsweetened Coconut

2 Rings Pineapple pieces cut into bite sized pieces (I usually go for a triangle shape with pineapple, it’s fun, adds a great texture and is recognizable to others)

1 teaspoon – 1 tablespoon Curry Powder according to your preference (I use just a little more than one teaspoon)

This salad is sweet, crunchy and the curry adds a nice kick of spices. I am hoping these ingredients will be easy for everyone to find. I already had these items at my house and didn’t have to go online/far away for the ingredients.

The use of coconut isn’t necessary but I enjoy how it tastes with the pineapple and raisins especially. At almost all natural and organic shops you can find raw dried unsweetened coconut flakes in the bulk section.

Coconut gets a bad reputation every so often, people either think it’s a fraud or absolutely love the benefits of coconut. I’m personally a fan 🙂 It contains medium chain fatty acids which can aid digestion, brain function, and skin health; it is also a good source of protein and fiber. At times people seem weary if the fat in coconut is “bad” but I think we all forget that there are good & bad fats. Coconut is a good fat, but it doesn’t mean its okay to just eat coconuts all day long just like everything in life there needs to be portions and control.

May be you are wondering if I am doing some indulging today…I ate a little of my favorite chocolate today Righteously Raw Maquai and Righteously Raw Maca! Deeeelicious ❤ Plus this kale salad is kinda like indulging hehe 😉
