Pumpkin Pie Banana Crème Smoothie

I can’t stress enough how much I do not care for pumpkin. I find it extremely boring, I never really know what to do with it and I’ve honestly never carved a pumpkin before either. But since it is the season for these types of things, I gave a go at making a pumpkin pie smoothie today. I love all of the spices in it but it still hasn’t changed my mind about pumpkin :p
On the positive side, pumpkins are high in Vitamin A, Vitamin C, Vitamin E, fiber, beta-carotene and low in calories.
Pumpkin Pie Banana Crème Smoothie:
Level: Easy
Tools: Blender, mincer
Time: 30 minutes
2 cups chopped pumpkin
1 date pitted and diced (optional, you could use a soaked fig if you want this drink to be extra sweet)
2 drops maca (about ½ teaspoon if you prefer to use the powder)
1 tablespoon ground flax
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon coconut nectar
½ teaspoon nutmeg
1 inch ginger minced or according to your taste
1/3 cup shopped Macintosh Apple with skin
12 tablespoons filtered water (I gradually added water until my blender could properly blend the pumpkin and apple)
Banana Crème:
1 frozen banana (this makes it super thick)
1 teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon coconut nectar
4 tablespoons filtered water (varies according to your blender, I gradually added water until it was the right consistency)
1 teaspoon hemp seed (optional, you could use walnuts or pecans instead)
Optional: Sprinkle cacao powder, crushed nuts or more cinnamon. I sprinkled on some cacao powder. 😀
To give your smoothie a swirl effect like I did to mine do one layer of pumpkin then a layer of crème.

Yum Jess, that looks like a delicious combination…banana creme and pumpkin! Can you taste the Macintosh in it or is it used mainly as a thickener for the smoothie? Thanks for making this up even though you’re not the biggest fan of pumpkin. At least you can make pumpkin seeds!
